Set my Camp Chef to 225 and went to bed. The FireBoard temp probe recorded the temperature to be above 300 for the entire cook and went over 400 at one point. I’ve recently cleansed my CampChef temperature probe connected to the controller. Thoughts?

I had a similar incident with a GreenMountain grill, and it ended up being the stack. Once I cleaned the stove pipe, it cleared up.
