I love cooking over an open fire. When I’m home, I cook my chili over coals sandwiched between two oak logs. I just keep the cover on the Weber’s, to control the heat (which also traps in the smoke). Wide open vents for sauté, and mostly closed for simmering. I find this way easier than smoking a giant meatball. So nice when the weather is cool.

Yessir. That’s such a great way to spend some time with fire.
What happens when log burns and chili spills
Is your top vent fully closed?
I cook soups that way but only kamado joe.
This is brilliant
Its all fun and games until the log burns out on one side and spills your chili
Interesting. I’ve never considered putting my chili in the smoker. Do you find it makes a big difference?
There’s nothing like cooking on an open fire when it’s cold out

My man.. oak and apple today..
Looks great! What would you say is the coal to wood ratio? Worried about over smoking it or is that a thing?
Please film this again but with a stationary camera. I could watch that bacon sizzle for hours.
