I love cooking over an open fire. When I’m home, I cook my chili over coals sandwiched between two oak logs. I just keep the cover on the Weber’s, to control the heat (which also traps in the smoke). Wide open vents for sauté, and mostly closed for simmering. I find this way easier than smoking a giant meatball. So nice when the weather is cool.

    Interesting. I’ve never considered putting my chili in the smoker. Do you find it makes a big difference?
