They always say that the rib eye is the number 1 cut but that it is very overrated even for the flavor and price, I am not going to lie I knew well but this week I have tried flap steaks, flank tri trip or filet mignom the truth is that it has nothing but nothing to envy a rib eye I will stick with my tri tip or flap meat and that this serves as a lesson for me not to spend for something that is very fashionable hahaha well I hope you get the idea

    I believe this is a translation from Spanish to English, although I could be mistaken. When I read it with both languages in mind, it made perfect sense to me.

    The OP is saying that he finally tried rib eye and, while he enjoyed it, he is likely to stick to cuts that are more affordable, such as flap meat.

    This OP is probably somewhere in Latin America, where flap meat is more commonly consumed than more expensive cuts like rib eyes.

    I agree actuallly. I like ribeyes and rib roasts (probably more) but I love my NY strips the most. Theyre still really friggin expensive tho.

    OP, I commend you for recognizing that what is fashionable is not always true (at least not for everyone). I personally prefer ribeye over all other cuts, but taste is subjective. Everyone should experiment and eat what suits them, best. However, if anyone eat steaks above medium temp – you’re dead to me.

    Ribeye has the best combination of texture and flavor. It’s tender, fatty, and flavorful. The fat is like bacon. It’s the most edible fat of all beef cut. If you haven’t, eat a t-bone or porterhouse. Have a Brazilian cowboy chop. These are all ribeyes. 2” thick ribeye is a life experience.

  10. I remember when flap meat was cheaper than ribeye. They’re the same now. Flap is even more expensive than skirt. I don’t know why. This is how it is across most grocery stores where I live.

    I agree. Ribeye is overrated. It has a high fat content, which some people like, but the fat is not evenly marbled. It has a giant band of fat running through it. Maybe I’ve just never had a good cut where the fat band is properly rendered, but I often end up with large amounts of chewy fat that I consider inedible.

    My steak of choice is pretty much always USDA prime cuts of sirloin. I like fatty cuts, but I want it evenly marbled throughout the cut; not in giant chunks.

    I also love filet mignon very much; sometimes more than sirloin. But I just don’t think the difference in quality justifies the difference in price to me.

    At the end of the day, it’s personal preference.

    You do you. I am pretty good with most cuts of meat, but I love ribeye and strip steaks. And of course a nice smoked brisket or ribs are a pleasant change of pace. Just enjoy what you enjoy.

    Rump cap/picanha. Go to a big butcher. There’s one here called “Super Butcher” and they have dozens of them… one of the cheaper cuts of beef but bust my jiblets, fucking amazing to eat. It is so good

    I’ve never been a big fan of too much fat. I’ll eat a ribeye, no question, but od rather chose NY strip, or even tri-tip when making my own, flap meat is also great. They’re typically at least abit cheaper, and more lean, while not being totally fat-less, giving me a better ratio most of the time.

    Its personal taste, fat IS where alot of flavor is going to come from, so its up to each person what they enjoy.

    I think ribeye is properly rated. It maybe hyped a bit on this sub but it is really good. I think Strips are underrated and Filet is way, way over rated.

    Still trying to find a pichana here in NE USA but haven’t gotten the will to go to a butcher directly.

    Anyway it really depends ribeye is way fattier so quality matters much more. Plus the feed theyre given to. A higher grade steak means the fat renders better and somthing like grass fed will have a much stronger taste in the beef since the fat stores that flavor and much more of it. Imo of course. But you definitely need to make sure you know how to render fat for rib eyes or else you’ll be chewing on it like gum or throwing it out.

    Hanger was sale yesterday and that was a nice piece for a steak. Every cut has got something going for it… chew, beefiness, fat, less fat… too beefy… love NYs and Sirloins too, not so much Filets, to each their own!

    Totally agree, I’m really enjoying skirt steak and flat iron at the moment. You can’t beat the 9.99lb price point!

    Im assuming “flap meat” is skirt steak. My Wegmans only sells Angus skirts and they cost $35 lb, same as the bone in rib eyes.
