Ingredients:
200g lamb mince
½ onion, grated
½ tsp Salt
¼ tsp black epper
¼ tsp cumin
pinch sumac
1 tbsp parsley , mince finely

mix everything together in a bowl and keep aside

Yogurt Sauce:
½ cup yogurt
1 garlic, minced
Pinch salt
1 tbsp parsley, minced

Spicy butter
50g butter
1 tbsp tomato paste
½ tsp Paprika
¼-½ tsp Chilli flakes (replace both with aleppo pepper if you have)
in a pan over med heat, melt unsalted butter then add tomato paste
pan fry for a few minutes to release the oils from the paste then add the spices and fry for another minute

Welcome back to my new series, Just Takes a Dump, where I just takes a dumpling and make it and eat it. It’s episode two and we’re making these delicious Turkish monty. Essentially, they’re these small cute dumplings that are filled with a lamb mixture and paired with a garlicky yogurt and topped with a spicy tomato butter. So good. So, for making our filling, the yogurt sauce is essentially yogurt, garlic, salt, and some minced parsley. And you’re done. For the tomato spice butter, we’re going to melt some butter and add some tomato paste and then go in with some chili flakes and paprika. So, I’m slightly cheating here and not making the wrapper from scratch. However, wanton wrappers are surprisingly a good hack. So once you’ve cut the wrappers into smaller pieces, you want to add a little bit of filling to the center of the wrapper. Then wet the edges and bring the two opposite corners together until you get a small parcel like this. Like she’s a little cute or whatever. And basically just repeat until you have no filling left. Two hours later. So technically they’re meant to be baked before boiling to help retain their shape. However, I forgot. So definitely do it if you want to. But they still turn out great. Once they’re boiled in a plate, you want to add your garicky yogurt, our cooked monty, top with some more yogurt, and our tomato butter sauce. And lastly, top with some mint for some freshness. Plus, it just makes it look pretty. And enjoy.
