


This is my third try and first “bread” looking sourdough bread 🙂
The most important part for me was to properly check my flour’s protein percentage. Never follow the recipes blindly. That was my mistake!
This was my recipe:
100gr starter (I used the starter at its peak)
400gr flour (10.8gr of protein)
250gr water
8gr salt
I mixed everything and did 3 stretch and folds every 30 mins.
Then I shaped the bread and left it in my fridge overnight.
I preheated my oven to 230°C for 30 mins.
I baked the bread 20 mins with the lid and 20 mins without the lid.
The hardest part is to wait, but I’ll wait for an hour before I slice it!
