A gallon of dehydrated tomato skins from several batches of processed tomatoes condensed down quite a bit in the blender. Tomato powder is amazing, and I really wish I'd started doing this sooner. I think we'll get to a point where we never need tomato paste again

I love this! What do you use the tomato powder for?
Very clever
It’s really good in dry seasoning mixes too. I use it in my taco seasoning and I made a bbq dry rub for my dad with it and he loved it. It’s also good in dips!
I use this when making tomato sauce. Just add the powder to the simmering pot of pureed tomatoes. Thickens it right up! No more standing over a pot for hours and hours as it boils down, stirring the while to keep it from scorching! A huge sauce project now fits easily into one day. Some claim that seeds and skins leave a bitter taste in the sauce but I figure that by the time the onions and garlic and all the other spices are in there I can’t taste the difference.
I love doing this! We use it constantly. My niece also calls it tomato jerky and eats is straight out of the dehydrator 😂
