Ingredients1 cup of Italian Quick Polenta 1 ⅔ cup of milk1 ⅔ cup of water¼ cup of grated Parmesan cheese¼ cup of mascarpone cheese⅛ cup of butter, diced ¼ cup of water1 tablespoon of chopped chives 1 tablespoon of chopped parsley ~ 2 teaspoons of salt to seasonContinue reading below -More from the WBRC KitchenDirectionsIn a medium pot, add the milk and water and bring to a simmer. Add the polenta and use a whisk to incorporate.Continue cooking over medium/low heat using a whisk until the polenta begins to pull away from the sides of the pan. Add the butter and mascarpone cheese and whisk to combine.Whisk in the parmesan until smooth and season with salt. It will be too thick at this point. Add water to obtain the correct consistency. Garnish with chopped parsley and chives.
