Super speedy and really tasty, this couscous salad is perfect for meal prep lunchboxes, a working from home lunch or light dinner. A great way to use up leftover roast chicken.

CHICKEN, CHICKPEAS & SUN-DRIED TOMATO COUSCOUS SALAD

Serves 2
 
1 x packet of Ainsley Sun-dried Tomato & Garlic Couscous
175g leftover roast/grilled chicken
1 x 400g tin chickpeas, rinsed & drained
¼ red onion (or 2 spring onions), finely chopped
4-6 sun-dried tomatoes, from a jar, drained, patted dry
Handful of rocket
60-80g feta
½ lemon, for squeezing
Olive oil, for drizzling
 
Prepare the couscous according to the packet instructions. Fluff with a fork and allow to cool.
 
Shred or slice the chicken and add to a bowl with the chickpeas, onion, tomatoes and rocket. Stir through the cooled couscous. Crumble over the feta and squeeze over some lemon juice and a drizzle of olive oil. Season with black pepper and salt (if needed). Toss together.

Time for a quickie. Yeah. Pour it into your bowl. Hot water. Make the flavor go wrong. Pop that aside for a couple of minutes. Chickpeas are one of my absolute faves. Then to that, my red onions are going in there. Chicken. Sundried tomatoes. For that couscous. Have a little bit of rocket going in there. A little bit of lemon juice going on there. Olive oil. Now, season it up a bit. Just mix that through a little bit. A lovely bit of feta cheese. Oh yeah. Just a bit of crumble or two of that on the top there. How speedy was that? Beautiful succulent pieces of roast chicken. We got my feta. I got my chickpea. I got my onion. We got everything. And all made with my sundried tomato and garlic couscous.

I know from a Western perspective couscous is just like burghul or such and is used to accompany salads as it is and they don't really know because for them it's something exotic but that's not really how it's supposed to be eaten that feels too dry but you do you it's probably still good tasting
