    Not to gatekeep! Here’s the recipe for the ganache for anyone curious! 400gr white chocolate
    120 g unsalted butter
    250 g banana
    6 g cinnamon powder (optional)
    100 g sugar

    There is a way to make banana ganache so that it doesn’t brown like this, and you don’t get that oxidized banana flavor, if that’s your preference for your recipe. You simply thinly slice your bananas, and let them soak overnight in your cream.

    How is it a ganache? I don’t see any heavy cream being folded into the white chocolate

    Ideally, should the bananas be a little more ripe than that? I always forget how banana ripeness impacts the recipe.

    Chocolate chips contain stabilizers to help them keep their shape and don’t melt well, don’t use chocolate chips for ganache. Use blocks of chocolate instead.
