Smoked and seared on the recteq deckboss 800, pulled at 120F internal and seared @ ~350F with seared plates. Rested with butter.

    Only for thick cuts….. regular pan then oven method for 1 1/2 inch to 2 1/2 or just pan… reverse sear is for the thick bois which I see these are… nice job
