We kept the heat low —just above the pipe-freezing level — to save cash we didn’t have. So I naturally turned to the oven to speed up proofing. But immediately sat down to play guitar. About fifteen minutes passed before I realized. I opened the oven to three or four melted plastic bowls, dough, and a billowing cloud of smoke.

I bought a two pack of buckets from Sam’s club, washed one that night, and then did this the next morning while making bread. And I swear I turned on the oven, never moved from that spot, listened for the gas to “whoosh” when it lit, then turned it off, so I have no idea how it melted so quickly.

Ah, caught it earlier than I did. Mine was melted all the way to the dough.

I make sure to use the proof mode on my oven. You can’t turn the oven on to preheat without hitting “off” first. If I manage to leave my dough proofing in there while hitting “off” on proof mode, I deserve the loss.

Did this month ago followed up by turning my oven on last week where I had put 2 bannetons to dry out while the oven was cooling. Sooooo I apparently need to babysat with my oven these days. Added sting was brand new bannetons
