Every fall I make a different type of kale salad to enjoy throughout the week. And this year’s version is one of my favorites yet. It’s got the most prominent sweet and salty flavors. And I think my favorite part might be this pumpkin seed pecan sort of brittle crunch situation that goes on top of the salad. But I also love how nutritious the kale and farro make this salad. You toss it together with my maple apple cider vinegarette. Then you add juicy honey crisp apple, that salty menchango cheese. I also like to add chicken sausage in here sometimes or even roasted butternut squash. Makes an excellent lunch. Great for meal prep and lasts a few days in the fridge.
