Orecchiette, Sausage & Broccoli Rabe
This seasonal pasta has been my hyperfixation lately ….the combination of flavors is just magical

Ingredients (2 portions):
2 portions orecchiette
2 sausages
6 cups chopped broccoli rabe
2 cloves garlic, smashed
EVOO & salt to taste

Method:
See my previous video for making orecchiette.

Wash broccoli rabe at least 3 times. Boil in salted water 6 min. Reserve cooking water.

While broccoli rabe cooks, remove sausage from casing and cook until no longer pink. Push to the back of the pan, add garlic, sauté until golden, then mix with sausage.

Add broccoli rabe and 1 cup reserved cooking water. Simmer 20 min, season with salt.

Cook orecchiette until al dente. Add to the pan with sauce, splash in pasta water to marry everything, and serve immediately.

This pasta has been my hyperfixation lately. When broccoli rob is in season, pair with good Italian sausage from the butcher and handmade orete. It’s just perfection. And you don’t need any fancy tools to make it. Just seminal water in your hands. I start by chopping and washing the broccoli rub, then boiling it in salted water for 6 minutes. It helps it soak up all the flavor later. While that cooks, I brown the sausage, add garlic until golden, then toss on the broccoli ra with a splash of that cooking water and let it simmer. Once the ord are al dente, I stir them in. The sauce clings to every little crevice. Cozy, simple, and the taste of Italian fall on a plate. Our team
