This is imabal. Some people confuse it for baba ganuj, but it’s not that. Mabal is arguably the superior sister to hummus. And I would even go as far as to say most people from the Middle East prefer this dish over hummus. The key to this is that your eggplant is grilled and has that smoky flavor as well as using a mortar and pestle to kind of push it all together. You don’t want to use a food processor for this cuz it ends up stringy, watery, and just not very good overall. You’re going to drench in olive oil, extra virgin, and if you can, look for Palestine or Lebanese olive oil. Garnish it with some pomegranate and parsley. And there you go. Enjoy it with some crackers or bread, whatever you like. It’s delicious.

In Syria
Grilled eggplant = baba ghanouj
Baba ghanouj = grilled eggplant with tahini (sometimes we put pomegranate as you did)
Mtabal = bulgur with yougurt (we boil the burgul and when it gets cold we add the yougurt, grarilc and salt and then we put it in the fridge, we consider mtabal as a salad in Syria and we eat it especially with grean beans)
For context, I am from Lattakia, in other regions in Syria like Damascus of Aleppo their may be differences and maybe one of the regions they call what you did mtabal, but in Lattakia this is what we call baba ghanouj 😂
And a fun fact: bana ghanouj in Arabic literally means spoild dad
