This is potato salad, the Mediterranean way! Pantesca salad is a traditional recipe from the island of Pantelleria, which is located between Sicily and Tunisia. It’s a true celebration of Mediterranean flavours that is so easy to make but has so much flavour. Boiled potatoes, fresh cherry tomatoes, crunchy and pickled red onions, fresh basil and oregano, savoury olives, capers and a generous drizzle of good quality extra virgin olive oil make an incredible potato salad that can be enjoyed on its own or as a side dish for chicken, steak, fish or even legumes. You’ll want to make this over and over again!

In the Mediterranean Sea between Tunisia and Sicily, there is a little island called Pantelleria. Here they make a delicious potato salad which comes together very quickly and is absolutely delicious. I want to show you how to make it. First of all, chop and pickle a red onion. I’m going to chop into thin round discs. Now, this goes inside the bowl along with a generous pinch of salt and 3 tbsp of red wine vinegar. Now I’m going to go in with my hands and give it a good massage. So the salt and the vinegar is coating all of the onions. Here I have some beautiful Sicilian pino tomatoes. But if you can’t find these, you can use cherry tomatoes. Wash them well and cut them in half. Tomatoes goes in with the onions. Now I’m going to add capers, olives, loads of fresh baso, loads of dry oregano, and let them marinate for about 10 minutes. Here I have some potatoes which I have boiled and cooked them all the way through and then let them cool down. Peel off the skin and chop them into bite-sized pieces and then straight into the bowl with the rest of the ingredients. Finish with a generous drizzle of good quality extra virgin olive oil and a good pinch of salt. M mom, this salad is delicious as it is, but as well served with chicken, with fish, with steak, or as well with some legumes. Look at this. The perfect bite. You’re going to love it.

  2. 👍💯It's exquisite and refreshing after the beach in summer. Maltese and Tunisians have the same dish. By the way, etymologically speaking, the name "Pantelleria" is Tunisian (Bent Erryèḥ / Daughter of the Winds / Figlia dei venti). Salve👍

  4. In the Mediterranean sea, between Tunisia and Sicilia, there's an island called Lampedusa. And it's where african migrants go, because it's technically european territory, so they can be rescued, while spending less fuel than a full cross of the Mediterranean aiming at Sicily or Italy.
