Did You Know? The word “mozzarella” comes from the Italian word “mozzare”, meaning “to cut off,” referring to how cheesemakers hand-cut the stretchy curd into portions.

Ingredients:

  • 1 gallon whole milk
  • ¾ cup white vinegar
  • Salt to taste
  • Bread
  • Spreadable butter

For the Fresh Mozzarella:

  1. In a large pot, heat the milk to 105°F.
  2. Turn off the stove and stir in ¾ cup white vinegar. Let sit for 10 minutes.
  3. Use a mesh strainer to collect the curds and place them into a cheesecloth-lined bowl.
  4. Sprinkle with salt, then squeeze the cheesecloth to remove excess liquid.
  5. Microwave the curds for 1 minute, then knead and shape into balls.
  6. Place the mozzarella balls into an ice bath for 10 minutes to set.

For the Grilled Cheese Sandwich:

  1. Cut the bread in half and spread butter on both sides of each slice. Add thick slices of your fresh mozzarella between the bread halves.
  2. Grill the sandwich in a panini press until golden, crispy, and the cheese melts beautifully.
