For anyone interested I followed the NYT Cooking recipe, but based on comments I added better than bullion, soy sauce and tomato paste, and doubled the wine and vinegar. I also reduced the liquid a bit before adding. Someone will be home to flip the meat at lunch time. Plan to to roast vegetables separately.

First time I heard of flipping a roast in a crockpot. It’s usually set and forget. You have enough liquid in there already where it will be fully submerged so the top will not dry out because the roast and other stuff will release a lot of water/ juice.
Plus opening it will let heat out. I would just set it and come back 10 hours later to a nice tender dinner.
