I don’t know who needs to hear this, but the easiest way to eat healthy is prepping a giant salad at the beginning of the week. I find when veggies are ready to go, it is so much more likely you’ll actually eat them. And this is my favorite way to do that. I always love to take advantage of seasonal produce like pumpkin and kale. Add a grain like quinoa and then load it up with all the toppings. Finish this one off with a super simple maple vinegrett. But the best part is it stores great in the fridge.
