



If this doesn't scream delicious, idk what does. To say this tasted incredible would be an understatement! Im adding this to my list of volume eating hacks; soups as a whole are such game changers for volume eating!

I started by cooking the corn on dry heat in a saucepan, then added the leftover corn juice (i used canned corn) onion, tomatos, leeks mushrooms, cauliflower, seasonings and mix for a bit (like 5 – 10 mins?) before adding beef stock mixed with 1 cup water, then the meatballs and let it bubble. Mix and add another half cup water. (I've found this to be the best water to veg ratio for the soup; not to much, not to little and not to thin either.) I feel like the longer it cooks, the more flavour there will be. (Don't overcook tho, u don't want all the water evaporating)
I garnished with mixed herbs and mushroom seasoning, but I bet a sprinkled of parmesion would next-level the soup, ngl.
