I wanted to experiment with a ramen that tastes like a classic French game dish, going all-in with French-Japanese fusion.

  • Shoyu tare with red wine & lingonberry
  • 8 hour poultry paitan
  • Chashu of sous vide pheasant with thyme and rosemary
  • Autumn salad of Brussels sprouts, enoki and roasted chestnuts
  • Poached pear with lingonberry jam
  • Pheasant fat, sesame oil, black sesame
  • Served with an ice cold Pear & Yuzu Spritz, made from the pear poaching liquid
