I’m pausing applesauce production to try something else with the apples from our prolific tree. Any tips or tricks? I’ve read that apple pie filling is sometimes tricky and has a lot of siphoning

I use the NCHFP pie filling recipe and Clear Jel with much success but YES – apples love to siphon. Take the headspace seriously; measure it, better to be 1/8” under than 1/8” over.

*(I have a metric boatload of ClearJel – if you are reading this and a member of r/Canning, live near central Indiana, and would like to try it, hit my DM)*
