Tonight I’m making a Greek lentil salad and it’s the again once again it’s from view from the back from fury. So Greek lentil salad and that’s the recipe here. I will tell you my ingredients. My ingredient would be some lentils, of course. So, I’m going to make two, three tins. I cheat. I use the tin and non dry because I want to have food for several days when I work. Some uh green onions or scallions as we call them here. Some parsley. That’s actually from my garden. That’s the only stuff that’s left. Some baby spinach. Some cucumbers. some tomatoes. So, she calls from cherry tomatoes. I only have these smaller tomatoes. That’s all I have. Some artich chokes and I cheat also. I take them from the tin. Some olives. And for the sauce, and also some feta. And for the sauce, it will be olive oil. I don’t like vinegar, so I skip it. Oregano, garlic, and pepper. I don’t have uh any dried tomatoes, so I’m going to skip that. Unfortunately, I love those, but I don’t have them. Basically, it’s a very easy recipe. Just mix everything together. There’s no cooking involved unless you buy some dry lentils, but it’s not my case. So, very easy to do. First, the lentils because they are already cooked. So, I put the lentils from the the three tins. Couple of handful of uh baby spinach. for scallions or green onions. We call them scallions here. Some diced uh cucumber. I have this small cucumber that I love, so I use that. Cucumbers are in. Some tomatoes are in. I cut them in a sl in pieces because they are bigger than cherry tomatoes. That bunch of parsley from my garden. Beautiful and very flavored. Actually, hearty chalk hearts from my mason jar that I bought already marinated. That’s okay. And apparently in the recipe also it’s marinated ones. Then the calamata olives, some feta cheese, and now I’m going to prepare the sauce and uh pour the sauce on it. Sauce. A couple of uh garlic cloves because I like it when it’s garlicky, some uh some ground pepper, some uh oregano, have the sundried tomatoes, but that’s where you would put them. And I will skip the uh vinegar because I don’t like that. I was pondering putting some lemon juice, but I won’t because I don’t want I want to keep that salad for a couple of days and I don’t want the uh the spinach to wither. So, I put just oil. So, it will be garlic, pepper, oregano, and oil. So, I put the olive oil and I’m going to emulsify even though there is no lemon just to blend the sauce and pour it. And I’m pouring the sauce. And that’s it. After tossing it, we are ready to eat. So that’s a Greek lentil salad with feta, tomato, spinach, uh, olives, um, scallions, garlic in the sauce, and cucumbers. Looks promising. And I have made a lot so I can bring it out to work in my bento box.
