




From watching my starter rise to the final bread product, I find this hobby so satisfying. Ridiculously so lol. The latest bread!
500g bread flour 330g water 100g starter 15g salt
Mix and knead for 5min, then let rest 1.5 hours. Stretch and folds every 15-20ish minutes x3. Total bulk was about 6 hours, got bigger than pictured in the bowl because I got distracted. Shaped, let rest about 20mins, and then final shaped and into the fridge for 16 hours. Preheated Dutch oven at 450, baked for 25min lid on and 15min lid off. Let rest several hours before cutting.

I’ve been making sourdough at least once a week for over a year and still love seeing what comes out of the oven.
Well I’m gluten intolerant now, so yes… Cherish it while you can.
Hi, obsessed newbie here! I haven’t even made dough yet but im so obsessed with my starter I can hardly wait to actually produce anything! Quick question, when you say knead dough are you referring to mixing ingredients for the autolyse, or is it slap and folds, or actual bread kneading? I haven’t seen that step in the various recipes ive read through so far…and your loaf is so stunning that I must know all your secrets!!!

– mix ingredients
– wait 1.5 hours
– stretch and fold #1
– wait 15-20 minutes
– stretch and fold #2
– wait 15-20 minutes
– stretch and fold #3
– wait 6 hours
– shape #1
– wait 20 minutes
– shape #2
– fridge for 16 hours
– remove from fridge and put straight into dutch oven?
– bake for 25 minutes lid on
– bake for 15 minutes lid off
– remove from oven and wait for several hours before cutting
