🍂 Roasted Fig & Crispy Goat Cheese Fall Salad

Crispy Goat Cheese Balls

Ingredients:
• 4 oz goat cheese, softened
• 4 oz cream cheese, softened
• 2 garlic cloves, minced
• 1–2 tsp fresh parsley, finely chopped
• 2–3 sprigs fresh thyme (leaves only)
• Pinch of salt and pepper
• ½ cup all-purpose flour
• 1 egg + 1 tbsp water (for egg wash)
• 1 cup breadcrumbs (panko or regular)
• Oil, for frying (avocado or light olive oil)
• Honey, for drizzling

Directions:
1. In a bowl, mix goat cheese, cream cheese, garlic, parsley, thyme, salt, and pepper until smooth.
2. Roll into 1-inch balls and chill in the freezer for 10–15 minutes to firm up.
3. Dredge each ball in flour, then dip in egg wash, then coat in breadcrumbs.
4. Freeze for 20 minutes before frying.
5. Heat oil in a skillet over medium heat (about 350°F / 175°C). Fry until golden and crispy, about 1–2 minutes per side.
6. Remove and place on paper towels. Drizzle immediately with honey while still hot.

Roasted Figs

Ingredients:
• 8–10 brown Turkish figs, halved or quartered
• 1–2 tsp olive oil
• Pinch of salt

Directions:
1. Preheat oven to 400°F (200°C).
2. Toss figs with olive oil and salt.
3. Roast for 20 minutes, or until soft and caramelized.

Balsamic Dressing

Ingredients:
• ¼ cup balsamic vinegar
• ½ cup olive oil
• 1 tsp Dijon mustard
• 1–2 garlic cloves, pressed or minced
• ½ tsp dried oregano (or 1 tsp fresh)
• 1 tsp honey (adjust to taste)
• Salt and pepper, to taste

Directions:
1. Combine all ingredients in a mason jar.
2. Shake well until emulsified.

To Assemble the Salad

Ingredients:
• 4 cups arugula (or mixed greens)
• Roasted figs
• Crispy goat cheese balls
• 2–3 slices prosciutto, torn into pieces
• 2 tbsp dried cranberries
• 2 tbsp roasted walnuts or pecans
• Balsamic dressing
• Optional: drizzle of balsamic glaze for garnish

Assembly:
1. Place arugula on a large serving plate.
2. Top with roasted figs, prosciutto, cranberries, and roasted nuts.
3. Add crispy goat cheese balls on top.
4. Drizzle with balsamic dressing and a touch of balsamic glaze.
5. Serve immediately while cheese is warm.
