I did this overnight relatively hot and fast on the WSM. 17 lbs trimmed down to 15.5 lbs roughly. 285 F for 9 hours, wrapped in butcher paper 5.5 hours into the process. I left a lot of fat on the meat because they specifically requested more fat. I personally would have trimmed it more but I’m fine granting their preferential request.
I wrapped in a lot of wagyu beef tallow which made the meat really wet even after resting. The bark was good but not excellent, but it had zero dry or overdone spots. The texture of the meat was ideal.
Overall I’d give myself an 8/10 this time with points remaining to be earned in the bark.
