    📕 Green spinach pasta dough:

    • 200g (7 oz) 00 flour
    • 100g (3.5 oz) egg yolks
    • 100g (3.5 oz) blanched spinach
    • 1 tsp salt

    Blend the spinach with salt and egg yolks until smooth and homogeneous, then use 115g (4 oz) of this mixture to make the dough.

    Instructions:

    1. Make the dough and let it rest, wrapped in plastic wrap, for 30 minutes.
    2. Roll out the dough to 1.5 mm (0.08 in) thick.
    3. Using a Chitarra cut your spaghetti.

    🔔 Secret tip: To avoid tearing the pasta sheet, dust one side of it with semolina flour before pressing down with a rolling pin.
