Ingredients:
– 32 oz frozen cherries, defrosted
– 1 cup sugar, divided
– 5 tablespoons cornstarch
– 2 tablespoons butter
– 1/2 teaspoon almond extract
– 1 tablespoon lemon juice
Instructions:
1. In a medium saucepan, combine defrosted cherries, lemon juice, and 1/2 cup sugar. Cook over medium heat, stirring frequently, until the cherries are very juicy and simmering, about 10 minutes.
2. In a small bowl, whisk together the remaining 1/2 cup sugar and cornstarch. Sprinkle over the cherry mixture.
3. Cook, stirring constantly, until the mixture bubbles and thickens, about 3 minutes.
4. Remove from heat, dot with butter, and stir in almond extract until melted and incorporated.
5. Let the filling cool for at least 1 hour. Bring to room temperature before using in your pie

Since fresh cherries aren’t in season, I’m using frozen and honestly, no one really notices the difference. Cook them with lemon juice and half the sugar until they’re juicy and simmering for about 10 minutes. Then mix the rest of the sugar with cornstarch. Sprinkle all in and cook until it thickens for another 2 to 3 minutes. Stir in a bit of butter for richness. Add almond extract and let it cool before filling your pie. It’s that simple.
