Classic Apple Crisp with Oats

Filling Ingredients
* 10 cups tart apples, sliced (862g)
* ¼ cup granulated sugar (50g)
* ⅓ cup light brown sugar, packed (73g)
* 1 ½ tbsp cornstarch (12g)
* 1 tbsp lemon juice
* 1 tsp ground cinnamon
* ¼ tsp ground nutmeg
* ⅛ tsp salt

Topping Ingredients
* 1 ½ c.all-purpose flour (180g)
* 1 ½ c.quick-cooking oats (135g)
* 1 c. light brown sugar, packed (220g)
* 1 tsp ground cinnamon
* ¼ tsp baking powder
* ¼ tsp baking soda
* ¾ c. salted butter, melted (170g)

Instructions
1. Preheat oven to 350°F (177°C). Grease an 8×8 or 9×9-inch dish (or 9×13-inch for doubled).
2. Toss apples with sugars, cornstarch, lemon juice, cinnamon, nutmeg, and salt. Spread in dish.
3. Mix flour, oats, brown sugar, cinnamon, baking powder, and baking soda. Stir in melted butter until clumpy. Sprinkle over apples.
4. Bake on a baking sheet for 1 hr–1 hr 5 min (1 hr 10–20 min for 9×13). Test apples with a fork at 1 hr. Cover if browning fast.
5. Cool 15 min. Serve with ice cream or whipped cream!
