🍽️ Recipe (Mujadara – Lebanese Lentils and Rice)

Ingredients (2 servings of 500 calories each):
100g onion (diced) (City Avenue Market sold this for 59 cents/lb)
100g brown lentils (Real Canadian Superstore sold this for $1.50/lb)
100g basmati rice (Real Canadian Superstore sold this for $1/lb)
Canola oil
2 cups water or vegetable broth
Salt, pepper, cumin

Instructions:
Soak lentils for a few hours.
Caramelize onions:
Heat oil on medium, add onions and salt.
Stir occasionally until deep golden (about 25–30 mins). Set aside a third of them for garnish.

Cook lentils:
In the same oil, add lentils, cumin, and water. (If you didn’t soak the lentils, boil and simmer the lentils for 10 minutes before adding the rice).
Add rice: Stir in rice, salt, and pepper. Cover and cook on low for 20 minutes until water is absorbed.

Rest & serve: Let it sit 10 minutes, fluff gently, and top with the caramelized onions.

Serve with salad, yogurt, or just a spoon and some gratitude. 🌿
