Serious question: can someone tell me why the eataly whiskey dry aged ribeye is $60/lb when the wholefoods dry age whiskey ribeye is ~$32/lb? Curious if there are notable quality differences (I.e. cattle lineage, dry aging duration, etc.) that justifies the markup

This is why I don’t buy steak anymore. Even when I make a great effort, I am an OK chef at best. I can’t justify paying these crazy prices and only be moderately happy with the result.

I’m in Orange County, California and get up to the Eataly LA location for lunch meetings and while I’m there stock up on pastas etc.
I’ve been debating about getting a small cooler for steaks like this along with their fresh cheeses.
I’d love to know how they turn out.
