Easy creamy Cajun shrimp pasta

Quick, comforting and so good!!

Ingredients
300g linguine (or any long pasta)
200g cherry tomatoes
Big handful of fresh parsley

For the prawns:
300g prawns, deveined and shells removed
1 tbsp olive oil
1/2 tsp salt
1 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp dried mixed herbs
1 tsp smoked paprika
1/2 tsp cayenne pepper

For the sauce:
2 tbsp butter
1/2 tsp salt
1 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp dried mixed herbs
1 tsp smoked paprika
1/2 tsp cayenne pepper
100ml double cream
100g grated parmesan

Method:
Season prawns with olive oil and all the Cajun spices.
Flash-fry in a hot pan for 2–3 mins, just until cooked through. Set aside.
Boil your pasta.
In the same pan, melt butter and add the same seasonings. Let them bloom for 30 secs.
Pour in cream, a splash of pasta water, and parmesan, stir till it thickens.
Add the pasta, prawns, cherry tomatoes, and parsley. Toss until glossy and coated.
Serve with extra parmesan!

And then all you do is just throw everything in. the pasta, some cherry tomatoes, the prawns, and some parsley. Toss it all together until it’s all glossy and coated.
