crispy air fryer zucchini spirals w/ garlic dill dip

  1. I don’t have the exact recipe, cause it changed a bit as I went along (kind of just experimenting).

    I ended up using about 3 tbsp oat flour, aprx 2 tbsp panko, about 2.5 to 3 cups of spiralized zucchini (I didn’t measure). For seasoning I used Trader Joe’s green goddess seasoning, paprika, salt and black pepper. Also used the liquid from a can of chickpeas (aka aquafaba) in place of what would be egg.

    After drying the zucchini between some paper towels I dipped them in the chickpea liquid then dipped them in the dry mix (oat flour mixed with the seasonings and a pinch of baking powder) then removed them from there and kind of “rolled them“ in the panko (it was a messy experience).

    I air fried them in two batches at 390 degrees in 5 minute intervals (10 max), flipping around a bit in between. I also used a small amount of olive oil spray for browning as well as to keep it from sticking to my air fryer.

    For the sauce I used 2.5 tbsp of nonfat greek yogurt, and mixed that with lemon juice, a generous amount of chopped dill and some bottled minced garlic that I browned a bit on the stove first. Yum!

    It could definitely use some work, but overall I enjoyed it and the sauce was perfect.
