Down in the south, Cowboy Caviar is the perfect hors d’oeuvre — it’s made with fresh, light ingredients that go down well in hot weather, and it feels decadent even though it’s not. Now, Giada de Laurentiis just put an Italian twist on this beloved dish, and we can’t wait to make it this holiday season.

“A little bit salad, a little bit dip, this scoopable Italian Cowboy Caviar is going to be a hit however you serve it. It’s an instant classic,” de Laurentiis wrote on Instagram. And the pictures make it look fabulous, with its blend of tomatoes, cheese, onions, and other ingredients, which are just begging to be scooped onto some crusty bread.

De Laurentiis also shared the full recipe on her Giadzy blog, which she described as a “game-changing appetizer.”

It calls for datterini tomatoes, Castelvetrano olives, mozzarella pearls, and additional delicious ingredients. You’ll combine most of the ingredients in a large bowl, then drizzle olive oil and a few more things on top.

Serve with crostini, pita chips, or crackers. It’s that easy! You can even make it ahead of time and refrigerate up to two days in advance, because who wants to save all their cooking for Thanksgiving morning? It’s the perfect appetizer for holiday parties you’re hosting or attending and will go with pretty much every entrée.

De Laurentiis is famous for her Italian twists on regular dishes, like her lasagna-style mac and cheese, and this one is no different. It’s going to be a hit this holiday season, guaranteed!
