Cibo was one of the first places to introduce refined, non-fast-food Italian cooking to Filipino diners. Founded in 1997 by the late legendary chef, Margarita Forés, the modern caffé-paninoteca was inspired by sandwich shops in Rome and Milan, and eventually expanded its menu to include antipasti, pastas, pizzas, and more. The only way you can go wrong is if you don’t order the spinach and gorgonzola dip. At the Mandaluyong outpost, situated in the middle of a walkway on the second floor of Edsa Shangri-La mall, there’s no ignoring the garlicky and cheesy scent of the spread along with toasted crostini.
