here's a volume-boosted version of this street corn-inspired chicken salad, which definitely has scope to be further volumised! https://sweetsavoryandsteph.com/healthy-street-corn-inspired-chicken-salad/

my modified recipe for 5 serves:

– 140g red onion, diced – about 1 small (56 cals)

– 200g frozen corn (215 cals)

– 200g red bell pepper, diced – about 1 large (54 cals)

– 45g jalapeno, diced – about 2, with seeds and top discarded (13 cals)

– 160g light greek yoghurt (89 cals)

– 1 lime

– 1 tsp cumin

– 1 tsp smoked paprika

– 400g rotisserie chicken meat, chopped – for me this was 300g of breast, and 100g of legs (685 cals)

– 3 green onions, chopped (24 cals)

– 100g rocket (25 cals)

– 325g cabbage, diced – about 1/8 head (91 cals)

– 95g reduced fat feta – or cotija if you have it! (241 cals)

Spread the red onion, corn, red bell pepper, and jalapeno on a baking try. Lightly spray with olive oil and salt and roast for 20 minutes at 190 degrees celcius.

Meanwhile, mix the yoghurt, zest and juice of a lime, cumin, paprika, and a tsp of salt to make the dressing for the salad.

Combine the chicken, green onion, rocket, cabbage, roasted vegetables, and dressing in a large mixing bowl. Crumble the feta over the top and enjoy!

How is the Rocket and green onions by end of the week? It seems like they would not hold up as well as the other ingredients.

It seems like this is around 1.7kg altogether meaning that each portion weighs around 350 grams?
