AFGHAN PASTA• Turkish pasta is going viral and it looks amazing but it only has me craving Afghan Pasta all over again which is pretty similar! + if you’ve been here a while you may have seen me share this one a few times.

INGREDIENTS:
•BEEF: 1.5 lbs ground beef
-1/4 cup oil, small chopped onion, 1 tbsp minced garlic, 1 tbsp ground coriander, 1 tsp ground cumin, 1 tsp onion powder, 1 tsp garlic powder, 1 tsp dried mint, 1.5 tsp salt, 1/2 tsp turmeric, 1/2 tsp black pepper. Optional 1/4 tsp cayenne pepper or 1 tsp paprika.
-1/2 cup water, 3 tbsp tomato paste, 1 15 oz can tomato sauce
•YOGURT: plain yogurt, salt, dried mint- optional minced garlic.
•TOPPINGS: sautéed green onions, chopped cilantro, dried mint

RECIPE INSTRUCTIONS:
-sauté onion in oil, add ground beef, minced garlic, and all the seasonings. Brown well for a few minutes. Add water, close lid and let it cook through. When water reduces add tomato paste, sear well, add tomato sauce and leave on a low simmer for a few minutes
-when pasta is cooked and drained, place it back in pot and add a few spoonfuls of meat sauce to coat the pasta.
-sauté green onions in a drizzle of oil
-make yogurt sauce

🤎LAYER: yogurt at the bottom of your dish, top with pasta, add a little more yogurt, sautéed green onions, meat sauce- layer one more time. For your final layer add fresh cilantro and more dried mint.

And at this point, I can make this thing with my eyes closed. So, let’s make it again. After sautĂ©ing and seasoning the beef really well, let it cook through. Then, to it, add some tomato paste and tomato sauce. Leave that on a low simmer for just a few minutes until extra saucy. And then, it’s time to work on your yogurt sauce. You can add garlic, mint, and salt. Then when it’s time to plate, for me it’s all about the layers. Making sure there’s a little bit of yogurt, extra meat sauce.
