    It doesn’t smoke. Just because the oven is 450 doesn’t mean the oil on the potatoes gets to 450.

    It’s fine. The oil won’t smoke. And these potatoes are legit the best over.

    Don’t overthink it. Make these potots asap

    This gets hate, but the recipe as-written isn’t the best ever because it suggests way too little oil.

    Like others said, its fine. The surface of the potatoes won’t hit 450. You’re in for a reat treat!

    The steam and being in contact with the potatoes keeps the oil from hitting the 410 degree smoke point of EVOO. Unless of course you leave it in there too long and the potatoes dry out too much.

    Funny, I just read the article from serious eats about why the hype on olive oil for cooking is misleading! It’s actually not as harmful as you think, may even be healthier. The big thing really was the cost vs Canola, etc

    It’ll smoke a little bit. The oil on the potatoes won’t, but the oil that drips onto the pan will. It won’t be too bad though.
