

The wife opened a jar of strawberry jelly that we made about five months ago, and it had mold on the top. First time this had happened to us. I processed the jars for 20 minutes in a water bath cause we are at living at 4000 foot in elevation. Not sure went wrong this time, any insight would be appreciated!

Did you follow a tested recipe?
Are you sure it’s mold? Looks like it could be pinholing, did any of the other jars you opened have it?
Mold would be fuzzy on the surface of the jam. I know low sugar jams don’t keep as long as high sugar jams but that’s after you open it. The colour tends to fade in storage but that’s just aesthetics.
If you are *at all* concerned about it, toss it.
If you reused lids, or if the lid had a scratch through its coating, this could be simply the metal behind the coating, reacting with the moisture and acidity of the jam.
idk if it is related but the jars look too full to me.
