  1. Ingredients:

    30g spinach, roughly chopped
    10 strips semi-dried tomatoes, drained and roughly chopped
    125g pearl couscous, pre-cooked
    220g chicken breast, pre-cooked (or your preferred protein)

    Dressing:

    Za’atar dressing (see my page for the recipe)

    Method:

    1. Add all of the ingredients into a large bowl except for the chicken.

    2. Pour in about 90% of the dressing, reserving the rest for later.

    3. Toss everything gently until the couscous and vegetables are evenly coated.

    4. Add the pre-cooked chicken (or your protein of choice) on top.

    5. Drizzle the remaining dressing over the top.

  4. Ohhhh. I might make this with tofu just to keep it vegetarian! I always have vegetarian just on Tuesdays! And I might use my teriyaki sauce as the dressing

  5. I love having a couscous salad whenever I go to the cafe, but it's usually over $20 for couscous!! I'm going to make this tonight and take it to work tomorrow. My boss is always saying my lunch breaks are too long so now she can't complain 🙏😂
