I love taking my fresh fish to restaurants in Alabama/Florida that do the hook & cook programs. However, does anyone have a copy cat recipe that is similar to the batter these restaurants use?

These types of batter typically have a significant amount of cornstarch in them. Try this:
1 1/2 cups flour
1/2 cup corn starch
1 tsp baking powder
Seasonings to taste
Cold beer or club soda
Some people dredge the fish in the dry mixture before they wet batter it. Make sure the wet batter is about the consistency of pancake batter or thin paint. The excess should run off the fish pretty quickly and still leave the fish thinly coated at the same time
Some recipes might use self rising flour and cornstarch instead. Sometimes they substitute cornstarch for corn meal. Play around with the amount of corn starch. A higher ratio of corn starch to flour will change the thickness and crispiness of the recipe. Typically less corn starch is more heavy and more corn starch is lighter. Some recipes include milk in the wet batter.

It looks like a pretty basic dredge. Doesn’t look like cornmeal, so probably flour and corn starch. Maaaybe potato starch.
What we would do back home [deep deep south Louisiana] was a quick dip in a buttermilk mixture then a seasoned mix of flour and cornmeal.
Very very rough recipe
“Marinade”
[can marinate for up to an hour, we usually just did a quick dip]
2 parts milk/buttermilk
1 part Mustard
Salt [you can put the salt here or in the dredge mixture. Not both]
Few dashes hot sauce
Dredge mixture
3 parts flour
2 parts cornmeal [you can likely change this to 1 part starch for the more smooth look the image has, kinda like japanese karage]
Seasoning [think general cajun seasoning]
Dry the fish well, dip in the milk mixture and let it drip/drain off excess then quickly dredge in the flour. And fry.

Flour, corn starch, paprika, garlic powder, onion powder. Combined to taste.
When I was a kid, my family went to a hook and cook restaurant in Port Aransas, TX, and it was amazing. Thanks for taking me back with your post!
