Chicken Spiedini with Lemon Amoggio 🍋
Lemon Amoggio: about 1 cup of Olive Oil, 2 fresh squeezed Lemons, 1 tbsp dried Oregano, 3 a garlic Cloves and 1/2 tbsp Salt. All ingredients are estimated but taste it when your done and add more of the ingredients if needed. Tasting is best 😋
Chicken Spiedini: marinate thin sliced chicken cutlets in some of the Amoggio (enough to coat), then bread in seasoned breadcrumbs, roll and then pierce with a skewer. Place on an oilier baking pan, then stay with olive oil. Bake at 425 degrees for 15 minutes, flip chicken, spoon alittle AMOGGIO on each piece and return to oven for 10 more minutes. If you would like the chicken to have more color you can put it under the broiler for a few minutes but watch it b/c they can burn quickly.

Tonight I’m making chicken spadini, but it’s going to be marinated with ammo. Is there anything better? I’m going to start making an amogue marinade, and that’s going to be a good amount of garlic and salt. So, in this bowl, I have a few chicken cutlets. I cut up chicken breast and then pounded them out thin. Here, I’m going to take the amugu marinade that I did and I’m just going to pour it over the chicken. So, I have this delicious chicken that’s been marinating in the amogu and it smells amazing. If you want to check this out, I have an olive oil spray. I’m going to spray the bottom of my tray. So now I’m going to put the chicken and bread it both sides. So once it’s breaded, I’m just going to put them aside for now. And it’s really good cuz you see the little bits of garlic. You see the oregano on there. You smell like a hint of lemon. Really good. Now we’re going to start with the skewers. So I’m just going to take it and roll it up and just do it like that. So, I’m going to do two per skewers, and they’re going to look like this. How cute are these chicken spadini? And you’re just going to lay it flat on your pan that’s been sprayed with olive oil. And there you go. So, really, you have six cutlets here. So, once they cook, you could kind of like take it off, you could slice it, or each person takes a skewer. So now before we throw it in the oven, I’m going to spray the top with some olive oil spray. This is going to help it get browned and get color as it cooks. I do have more among you reserved. I didn’t use the whole thing. This we’re going to put a little bit more on top like the last few minutes for like a little extra added flavor. But for now, we’re going to bake it just like this. So these have been cooking for 15 minutes. So now I flipped them all. I’m just going to put a little bit of mo on top for the last 10 minutes. Put it back in the oven maybe about like 10 minutes till it browns a little more and then it’ll be good. Chicken spidini is that easy to put together. Just a little amogy baked in the oven. 25 minutes and you’re done. A little chicken, a little roasted potatoes, and a little salad. And you have a complete dinner. Enjoy. Chapter.
