
The tip to mash my thumb in the middle of the patty helped. I don't think the beef was dried out enough. Probably needed slightly more bread crumbs. I redistributed the cheese so patty was covered both sides. Hoping that would prevent a come apart. It worked better, but still needs some work.

You definitely shouldn’t need to add breadcrumbs into your patty! The patty can and should be 100% beef.
An easy hack is freezing your ground beef patty before cooking. It holds its shape way better when cooking, lots of burger places do this. A weight on top of the patty can also help a lot, but that’s an extra item to buy.
