



I am still very new to sourdough, so I can’t tell just by looking if it is well proofed or maybe over proofed? But it tastes really great! So proud of my first loaf that I had to share. I named my starter Dougphelia 🙂
Please let me know your thoughts! Also, can anyone tell if it’s over-proofed?
Dougphelia was made using the schedule in the photos.
On day 7 of growing my starter, I decided to make my first loaf (just before seeing on Reddit that it’s not really recommended until at least two weeks)
I took: 100g starter, 325g water, 475g Bob Red Mills Bread flour, 10g salt and mixed with a bread whist. Left for 30 minutes.
Did 1 round of (4) stretch and folds (incorrectly)
Waited 30 min
Round 2 stretch and folds (I watched videos this time), wait 30 min
Round 3 stretch and folds, wait 30 min
Round 4 stretch and folds, wait 30 min
Transferred my dough to a straight walled large jar (to measure growth during first proof) I only let it grow about 70% (see photos)
Next, I moved it to a floured surface, roughly shaped it into a ball and did the bench rest for 30 min.
Now (approximately 6 pm) I did my final shaping and put it in my basket.
Instructions said to proof in Fridge for 12-16 hours. However, I was waiting for a Dutch oven to get delivered so it was in there until 1 pm the next day.
I preheated my oven to 450 degrees for 30 minutes with the Dutch oven inside
I flipped my dough onto parchment paper, did some scoring, and then moved it into my preheated Dutch oven.
I baked it at 450 for about 20 minutes then removed the lid. I let it bake for about another 25 minutes (unfortunately, this was poorly timed with a work meeting so exact times are not known)
Let rest for 2 hours and here we are!
Notes: I live in Southern California where it’s warm (highs of 72-78 this week) and humid

I’m also new to sourdough baking, that that looks AMAZING for a first loaf especially with your own starter! How did it taste?
Looks great! I literally just started this sourdough starter today and I can’t wait to start baking with it. Also, love the name of your starter 😉❤️🔥🫶🏻
