
Chicken, bacon, Chile enchiladas. They called them "green peppers" but thankfully they were poblanos not bell peppers. I thought they were really good! The 4 person serving was HUGE so I only made half. I'll make the rest this weekend.
I thought it would be annoying to roll each enchilada but it's pretty easy if you keep the tortillas out at room temperature. (I didn't need to heat them). Even better on day 2.

I didn’t make these enchiladas but I made the Verde enchiladas previously. I was surprised by how easy it was.

I made these this week and they were delicious! I needed to supplement with my own shredded cheese but they turned out great.
