was just going to use as lunch meat anyway but would have been nice to get a hot wet shot and try out the smoker but dam thing took forever. first pastrami so lot of improvement to be made.

    Cutting cold is the way to do it. Doesn’t fall apart. Can cut thicker slices easier. And Bruno one or two like a rasher of bacon
