
Hello, me again!
Had a bunch of chintan in the fridge I needed to use for social media posts.
Tonight we have a chicken & duck chintan, shoyu tare, pork chashu, charred scallions, curled scallions, ajitama, and ground duck wontons (first time for me, absolutely incredible). Aroma oil is duck fat and garlic oil.
I’ve really been loving this chicken and duck combo, definitely worth toying around with.
What’s next: Really want to delve into lobster paitan, going to figure something out with that.
