The Best Way to Cook Duck Breast.

*Method*
1. Score the fat, avoiding the meat, and season generously with salt.
2. Place the duck breast skin-side down in a cold pan.
3. Heat on medium-low until the fat renders and the skin is crisp.
4. Flip and cook briefly on the other side.
5. Roll the breast to sear the edges.
6. Baste with the rendered fat.
7. Turn off the heat and let the duck rest, turning occasionally.

and that’s why starting in a cold pan is the best way to cook a duck breast the first step is we’re going to score it so basically we just want to run the knife gently to cut through the fat but not through the meat we’re going to seize them very generously with some salt and get them into the cold pan put it on a medium low what’s happening is we’re slowly bringing up the temperature and rendering out that fat you can see the Ducks kind of getting a little bit more plump that tells me we’re getting close to turning them over just like cooking a steak we’re going to press it to see how done it is now I’m just going to roll the duck breast around just so we get a bit of heat on the sides so I’ve added no extra oil no butter no other fat this is purely duck fat that we’ve rended from the breast nice little bounce to it I’m going to turn the heat off whilst it’s resting we’re going to keep turning it just so we get an even heat all the way through so we have the little tenderloin on the side there take that off and then for me I just like to cut it straight down the middle and then we have a perfect medium cooked duck breast

Cooking poultry to medium hurts me. But that still looks delicious
Never press your fingers to tell how done something is, it's INCREDIBLY unreliable, even sounds like you're ABOUT to say medium-rare before seeing it's not. We have meat thermometers for a reason.
