So I ate these way to fast and didn’t take a photo of the tin. What do I do with the oil?
Got these Pepys Variegated scallop in Galician sauce and they were very tasty! A couple with some minor amount of grit but tolerable. Now I’m left with this beautiful oil/sauce and I really don’t want to waste it. Any ideas?

Drink it. Slurp it up over the sink, friend. It’s what the lord intended.

Soak it up with some bread!

Mash up some crackers with a spoon, dump them in the tin to soak up the oil, then fry em as weird little fritters.

Add to a pasta!

I just had this with gnocchi! Dump the whole thing in, and add in whatever other ingredients you like such as veggies. Don’t even need a sauce, the can’s sauce is full of flavor.

Add vinegar and make salad dressing!

This question is why I end up eating a lot of tins with good sauce over rice. It’s a very handy general purpose solution for not wasting a sauce. Sometimes bread works better but like 90% of the time rice is better and it’s always at least OK.

Boil some spaghetti and toss it in the pan with the oil

Ooh. Make some pasta. Cook some spaghetti (single or double serving) very al dente. Then heat the remaining oil to a pan and would not stop you if you added minced garlic to the pan and sautéd it . Add the pasta directly into the pan to finish cooking the pasta. Add a splash of pasta water to help emulsify the oil and coat the pasta. I would not fault you either for adding a splash of lemon juice or champagne vinegar. Also breadcrumbs w garlic toasted in butter w the lemon peel microplaned and chopped parsley into would be decadent. But I dunno.
