I was given this 4.3lb whole filet. Grass fed beef. What would you do with it? It's partially thawed now; I'm making dinner for 7 people in about 8 hours.

I would sous vide at 130f for abt 4h

I’d portion it, about 2.5 inches thick, salt it, pepper it, garlic powder it. Let the salt penetrate for 2 hours in the fridge, then sous vide for 2.5 hours at 130, take it out of the bag, make a sauce with the bag juices and let the surface dry meanwhile. Then, hot sear. Keep it simple.

I would cut into streaks and just grill. Filets is so tender sous vide is not really necessary. But then again, doing a bunch at one time, you could do 137 for 1.5 hours and quick sear and I’m sure all would be happy.
