  1. Ingredients:
    1 cup red lentils (rinsed)
    1 small potato + 1 carrot + 1 onion + 4 garlic (chopped)
    1 tbsp olive oil
    1 tsp tomato paste
    1 chicken or veg cube
    1 tsp cumin, ¼ tsp turmeric
    Salt + black pepper to taste
    5 cups water
    Optional Drizzle: 2 tbsp butter, ½ tsp chili flakes, ⅓ tsp paprika

    Directions:
    1️⃣ Sauté onion, carrot, potato & garlic in olive oil for 2-3 mins.
    2️⃣ Add tomato paste, spices & cube. Stir.
    3️⃣ Add lentils + water, simmer 20-25 mins till veggies are soft.
    4️⃣ Blend till smooth.
    5️⃣ Melt butter, add chili & paprika, drizzle over soup.
    6️⃣ Serve with lemon & croutons.
